Baked Rice Pudding

With it having dropped around 8 degrees over the course of the Easter weekend I feel like we have truly entered the pudding season. When I step outside I smell wood fires burning. While I love that smell I am still a little worried that people in Auckland are already feeling the cold and we are still in April. I saw a girl wearing a puffer jacket today. Not ok kids. Not ok.

Caramel Coconut Slice

Finding physical evidence that I ever made this slice in my flat is hard to come by. It seems to disappear as quickly as it comes out of the oven. I hid portions of the first batch I made in the freezer but they were soon discovered and devoured by sugar craving flatmates.

Moussaka

For my friends down South, it looks like winter is no longer coming and is in fact here (slash down there). It frightens me that Aucklanders have started donning tights and "winter clothes" while it still remains a balmy 18 to 20 degrees. I have a feeling my work colleagues are going to find my bare-legged behaviour come June very unnerving.

So in honour of the gloomier weather I have decided to treat you with a slightly more interesting but still comforting alternative to the well-loved lasange.
