Pistachio and Cardamom Kulfi

Kulfis are an Indian no-churn take on ice cream. They use evaporated milk to get that wonderful caramelised milky taste to them. The reasonably high sugar and fat content also makes them almost fudgy when you slice a spoon through them.

Banana Hazelnut Cakes with Cream Cheese Muscovado Icing

I made these so long ago that I had to re-make them in order to remember what on earth I even put into them. Classic. Luckily I remembered and they were just as good the second time around. If you're partial to the odd banana cake then I recommend giving these a hoon if you're in the mood for something a little bit more spesh.

Little Lemon Courgette Cakes With Goats Cheese Icing

These were made as part of a dessert for The Supper Club. For those who don't know, Dylan and I often invite silly numbers of people around for dinner and then ply them with food and liquor until they have no choice but to roll home. Often a heavy desert is the last thing anyone wants at the end of one of these things so I opted for something lighter and less sweet than a typical stodgy pud.

Chocolate Hazelnut Baci Cakes

February 23, 2017

First time around these little cakes were an excellent wee case study on the art of perseverance. To summarise I managed to wreck two batches of ganache, accidentally make hazelnut butter as well as accidentally melting my cream up with melted chocolate that was too hot. Too much chocolate had been invested to give up so I kept on keeping on until I ended up with six actually pretty good looking baci cakes.

Salted Caramel Hummingbird Cake

Dylan came home to this three layer tower that we didn’t know what to do with. It ended up being dropped off into his office where everyone could enjoy it the next day. I have to say it must be weird having someone’s girlfriend just send in towers of cake and treats just because she was bored at home.
