Chocolate Hazelnut Baci Cakes

February 23, 2017

First time around these little cakes were an excellent wee case study on the art of perseverance. To summarise I managed to wreck two batches of ganache, accidentally make hazelnut butter as well as accidentally melting my cream up with melted chocolate that was too hot. Too much chocolate had been invested to give up so I kept on keeping on until I ended up with six actually pretty good looking baci cakes.

Delicious Rhubarb Butterscotch Cake

August 3, 2016

I have been trying to escape the chocolate layer cake for some time. I wanted to experiment with seasonal produce for something a little more interesting than a dense, brown sticky tower of cake. I found this recipe in one of my favourite cookbooks, Ripe Recipes by Angela Redfern. It was for a four later masterpiece of messy, rustic glory. Seeing as rhubarb is in season at the moment I knew this would be the cake for us!

Orange Almond Syrup Cake

March 24, 2016

So I made this cake originally for Shine's Orange Friday appeal where we raffled it off and made $167.50 to help support the victims of domestic abuse in New Zealand. See, sharing is caring! I found myself making it again for when the boyfriend's parents came over to meet my parents for the first time. Its a good one for sure when you don't feel like making a complicated cake or faffing around with icing one.

Nectarine Raspberry Summer Cake

February 18, 2016

Birthday cakes are my favourite to make, especially if unexpected. Funnily enough I am inclined to go to more effort if they are a surprise. This one here was a surprise (or at least it was supposed to be).

Dark Chocolate Pretzel Cake

December 20, 2015

This cake would be a good one to make last minute to take to a barbecue this summer. All you need is a couple of hours lead time, four-ish ingredients, almost zero skill and maybe a few scoops of ice cream to serve.

Strawberries and Cream Layer Cake

November 21, 2015

I am pretty stoked strawberries are back in season. I've been a little unconventional in my consumption as I have been chopping them up and tossing them through salads. I decided to make a light summery cake and put my punnets to sweeter use.

Lemon Coconut Layer Cake

November 4, 2015

I had 8 eggs that were about to go off. Sophie logic therefore made it totally reasonable to use these eggs along with five cups of coconut, half a kilo of butter plus all the rest to make a massive three layer naked cake.

Ricotta and Boysenberry Cake

October 23, 2015

I swapped a small bag of juicy lemons for a kilo of ricotta the other day. These are the sorts of underground dealings that I dabble in.

Raspberry and Coconut Cake

October 14, 2015

I made this raspberry and coconut cake from a recipe my Mum gave me. She I believe got it from her friend Sue. Exact origins beyond that are unknown but regardless it is delicious.

Recipe number 40 is rather special. A week ago today Nana left this earth. To celebrate her life we all gathered in Matamata and of course there was afternoon tea. The Aunties and I all made something of hers. I was on cheesecakes. Welsh cheesecakes
