Lemon Coconut Layer Cake

I had 8 eggs that were about to go off. Sophie logic therefore made it totally reasonable to use these eggs along with five cups of coconut, half a kilo of butter plus all the rest to make a massive three layer naked cake.

Milhojas (Thousand Layer Cake)

Due to the heavy European influence in South America, delicate and delicious pastries are things Chileans do well. I stumbled across this little shop called Casa Dulce and was immediately drawn in my this mesmerizing meringue and dulce de leche creation in the window. Turns out this was a milhojas, or a thousand layer cake. Layers upon layers of flaky pastry filled with dulce de leche. There are quite a few versions of this cake but the one I tried had custard alternating the delicious caramel and as well as being smothered all over in meringue. It was love at first bite.

Birthday Cake

The problem with making cakes is that you need people to eat them. My flatmates and I will get through maybe about a third of a cake max before we lose interest or fear our sugar intake has exceeded the yearly maximum to eat too much more. I got invited to a friend's 25th birthday gathering and leapt at the opportunity to celebrate with cake!

Meringues with Chocolate and Pistachio

I spent yet another raging Friday night hanging out with my family as well as making meringues. I think my life is comparable in its extremeness to that of Bear Grylls or a world champion BASE jumper. Ooh I did some washing too. Two loads of washing in fact. I really should have posted about it on Facebook but then again sometimes it's best not to boast.

Little Lemon Meringue Pies

I had a hankering. A hankering for crisp pastry and rich, thick lemon curd. Lemon meringue pies up until recently had never really floated my boat. Sure they were nice but often it was just a sugar fest with some half assed lemon curd trying to convince you it was a classic worth remembering.
